Macros: 610kcals, 30g protein, 100g carbs, 15g fat, 12g fibre.

Ingredients Serves 1 1/2 red onion 85g mock chicken (taste & glory) 1/2 chilli Handful cherry tomatoes 2 garlic cloves 50ml single soy cream 1 tbsp tomato puree Sprinkle dried basil Sprinkle dried parsley Handful of rocket 100g pasta

Method

Step 1 Finely chop up the onion, garlic, chilli and get the pasta cooking Step 2 Fry off the onion till softened, then add the chicken, chilli, cherry tomatoes and garlic, and continue cooking till fragrant Step 3 Pour in the cream and tomato paste, and stir in, along with the herbs and rocket Step 4 Drain the pasta, add to the pan, the mix through and check seasoning, then serve!
