Ingredients:

  • 2 tbsp ground flax seed

  • 1 banana

  • 1/4 cup golden syrup

  • 1/4 cup vegetable oil

  • 1/2 cup grated apple

  • 1/4 cup brown sugar

  • 1 heaped tsp bicarb soda

  • 1 tsp all spice

  • Pinch sea salt

  • 1/2 cup plant milk

  • 1 cup grated carrot

  • 1/2 cup rolled oats

  • 1/2 cup blitzed almonds

  • 1 cup plain flour


Method

Step 1

Make a flax egg by mixing the flax seed with 5 tbsp warm water

Step 2

Mash your banana and whisk in in the flax egg, golden syrup, oil

Step 3

Next add the apple, brown sugar, bicarb of soda, allspice and sea salt, and give another whisk

Step 4

Finally, mix in the carrot, oats, almonds and flour, and mix in thoroughly

Step 5

Lightly oil your muffin tin, spoon in the mixture, sprinkle on some desiccated coconut and walnuts, and bake at 180 for 20 minutes. Enjoy!
